A Marathon Week At The Farm!

This was an especially busy week at the farm!
Even more so since Matthew's last day was Friday, May 13th. His elderly Dad has been diagnosed with cancer and Matthew wanted to spend more time with him as well as help his Mom out. While, we will (have) missed him we know he has made the right decision and will always be glad for the memories he'll cherish for the rest of his life. We bid him God's speed and are committed to pray for him & his family as they navigate the days ahead.
Our other full time production help went to part time about 5 months ago when he fulfilled a childhood dream of becoming a fireman. Now, he only works at the farm 2 to 3 days per week.
Fortunately, our plant processing team is hitting on "all cylinders". Monday, Amy, Beth & I cut and packed two pigs - fresh hams are now back in stock and smoked hams will be by the end of next week. We also ground several hundred pounds of beef trim into ground beef so our Jackson Metro customers could place orders.
Speaking of pork - in April we made our first Bacon Burgers. While they were OK, the flavor was not all I was expecting. Ding Ding! A farmer friend from MO is always bragging on how good his bacon burgers are so I contacted him and asked if he would share his recipe. Which he did.
So, the last thing we did Monday was make about 50 pounds of "David's" bragging rights Bacon Burger. And yes - it is very good. Orders delivered starting next month will be able to receive our new bacon burger recipe and taste the difference for yourself. I'm sure you will not be disappointed.
Wednesday & Thursday we had seven (7) beef to cut and pack. We set a goal to complete half each day.
May is our third month to cut & pack our beef here on the farm. Our team has really improved in both quality and throughput. The first month it took us forever! This month we made our goal in just over a normal 8 hour day.
Then, afterwards on Wednesday Beth & I ground two beef (four half-beef custom orders) because one of them needed to be on the delivery Saturday in Madison. That kept me up past my regular bedtime, but we got it done.
Friday morning we packed the Jackson Metro orders and after lunch ground half of the farm beef trim into ground beef. The balance will be completed this weekend and then ALL cuts will be added to our website for June orders.
I'm so thankful God gives us good folks to help here on the farm and strength to be able to provide you with pasture raised, nutrient dense food for your families.
